How to Cook Rhea
In general, rhea should be treated as very tender beef. Because rhea is so very lean,
overcooking should be avoided.It can be cut into strips and then stir-fried
for about ten minutes with various herbs and vegetables. If roasted, the oven
temperature should be around 350 degrees Fahrenheit, and the meat should be basted
or foil wrapped and cooked for 20-25 minutes per pound. It can be done as a
grilled steak with sauce, or stirfried quickly with lots of onions (fried previously)
- about four minutes.

Recipes
Apricot and Honey Roast Rhea
Ingredients:
- 2kg meat from rhea leg
- 8 peppercorns
- 6 cloves
- 1/2 teaspoon mace
- 1 teaspoon thyme
- 1 large tin apricots
- 3 teaspoons salt
- 1/2 cup olive oil
- 1/2 cup wine vinegar
- 4 tablespoons flour
- 4 tablespoons honey
Sprinkle meat with thyme and mace. Marinade in oil and wine vinegar with cloves
for six hours, turning over regularly. Rub with salt amnd pepper, wrap in foil,
and place in baking dish. Bake 20 minutes per 500g. Uncover and pour remaining
oil and vinegar over meat. Bake another 20 minutes. Spread meat with honey.
Add the apricots around the meat and bake another 20 mins. Serve with potatoes
and vegetables.
(serves 8 to 10 people)
Thai Barbecued Rhea
Ingredients
- 1kg tender rhea, cut into 2.5cm steaks
- 1 cucumber, peeled and thinly sliced
- 3 red pepper slices
Marinade
- 4 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 teaspoon ground coriander
- 1 tablespoon finely chopped fresh coriander
- Pinch black pepper, fennel, cinnamon, chives, ginger
- 1 tablespoon soft light crown sugar
- Make marinade --- mix soy sauce, oil and coriander in a
shallow dish. Stir in sugatr and black pepper.
- Add rhea to dish, coat on all sides. Cover and marinade for 2
hours.
- Arrange cucumber slices in length
- Drain rhea, and keep marinade. Cook in marinade for 2 minutes
each side. Bring marinade to boil and simmer for 3 minmutes. Spoon
over rhea and garnish with coriander and red pepper slices.
Rhea & Onions
Ingredients
- 1 clove garlic
- Olive oil
- 3 large onions
- 0.5kg rhea
- Pinch black pepper
Cut rhea into 1cm slices. Cut onion into strips and sauté. for
10 minutes in olive oil in a heavy saucepan with lid on,
occasionally stirring. When soft add pre-fried rhea strips and seasonings. Cook
stirring occasionally for 5 minutes on a low heat. Serve with
boiled potatoes and salad.
